Ingredients: 1lb ground beef 1 small onion 1 Bag Tostado chips (I like Tostitos Bites) 1 pkg. Old El Paso taco seasoning 2 cans Old El Paso red enchilada sauce 1 small sour cream 1 pkg. shredded Mexican cheese

Directions: |
Directions:Brown ground beef and onion and taco seasoning. Pour chips in a large mixing bowl. Add meat, 2 cans sauce and 1/2/ cheese. Stir. Spray rectangular dish with Pam, then put mixture in dish. Cover with more cheese. Bake on 350 for 30 minutes. Remove from oven and cover with sour cream. Note: You can use 1 dozen tortillas and gently cook them in oil until soft, then tear them up and use them as chips. But the tortilla chips are easier, less grease and taste just as good. You can also substitute chicken for the beef and green enchilada sauce for the red and make it Chicken Enchilada Casserole :-) |

Notes: I've tried a lot of enchilada sauces, but have never found one I like better than Old El Paso. Do you think I am prejudiced since I was raised in El Paso??
