3 egg whites
1/4 tsp cream of tartar
1 cp granulated sugar
1/2 cp saltine crackers, crushed, (about 12 crackers)
1/2 cp chopped pecans
1 tsp vanilla extract
2 pints fresh strawberries, divided
4 cps miniature marshmallows
1 carton (8oz) frozen whipped topping, thawed
red food coloring, opt

Directions:
Directions:
1) In a bowl, beat egg whites and cream of tartar on med speed until soft peaks form, gradually beat in sugar, 1 tbsp at a time, on high til stiff glossy peaks form and sugar is dissolved.
2) Fold in crackers, pecans and vanilla.
3) Spread onto the bottom and up the sides of a greased 10 inch deep dish pie plate.
4) Bake at 350f for 25 to 30 mins or until meringue is lightly browned.
5) Cool on wire rack.
6) Set aside one strawberry for garnish.
7) Slice half of the strawberries, set aside.
8) In a bowl, mash the rest of the strawberries; drain juice, reserving 1/2 cp.
9) In a saucepan, combine marshmallows and reserved juice.
10) Cook and stir over low heat until marshmallows are melted.
11) Refrigerate until partially set.
12) Fold the sliced and mashed strawberries and whipped topping into marshmallow mixture.
13) Add food coloring.
14) Spoon into meringue shell.
15) Garnish with the reserved strawberry.
16) Refrigerate for 3 hours or until set.
17) Refrigerate leftovers.
