2 cp heavy whipping cream
2 tbsp confectioners sugar
2 cps cold milk
1 1/2 tsps peppermint extract
5 to 6 drops of green food coloring, opt
2 pkgs (3.4 oz each) instant vanilla pudding mix
1 cp miniature semisweet chocolate chips
1 pastry shell, baked, 9 inches

Directions:
Directions:
1) In a small bowl, beat cream and sugar until soft peaks form.
2) In a large bowl, combine milk, extract, and food coloring.
3) Add pudding mixes; beat on low speed for 2 mins or until thickened.
4) Fold in cream mixture and chocolate chips.
5) Pour into pastry shell.
6) Refrigerate for 3 hrs or until set.
