1 prepared pie crust (Pillsbury works well)
2 lg. fresh tomatoes, sliced
2 c shredded mozzarella cheese
6 T chopped fresh basil
fresh ground pepper and salt to taste
1 clove minced garlic
olive oil

Directions:
Directions:
Preheat oven to 375º. Unfold pie crust and place in pie pan. Pinch edges to create decorative crust. Prick bottom with fork. Spread cheese evenly over bottom. Arrange sliced tomatoes in one layer on top of cheese. Sprinkle fresh basil, salt and pepper and garlic on top of tomato slices. Drizzle liberally with olive oil. Bake uncovered for 25-30 minutes or until crust is slightly golden brown. Cool slightly before serving

I was served this tart at a cookware demonstration party. It is just amazing! You can cut and serve it in wedges for an appetizer or combine it with a fresh arugula salad and call it a meal!
