1 chicken
8 oz. spaghetti
1 can cream of mushroom soup
1/2 to 3/4 cup milk
2 tsp.chopped pimento, optional
1 can chopped mushrooms
1/2 c. shredded cheddar cheese
salt and pepper
parmesan cheese, grated

Directions:
Directions:
Place chicken in large kettle, add 2-3 quarts cold water and bring to a boil. Simmer until chicken is tender. Remove chicken from the pot, reserving the broth. Bone chicken and cut into small pieces. Cook spaghetti in the broth until tender and drain. Blend soup and milk, add chicken, pimento, mushrooms and heat on stove. In a 9x13" pan, layer spaghetti, chicken mixture and cheese. Bake at 350º for 30-35 minutes

This recipe can easily be doubled. If you like the casserole creamier, use more milk.

When Whitney was in 4th grade, we asked her to take this casserole from the refrigerator and place it in the oven for us. We were still at work and she didn't know and we didn't tell her to remove the saran wrap from the top of the pan. We all sat down to dinner and stuffed our mouths with this noodle dish but noticed a crunchy quality in many bites. Soon we discovered the added texture was plastic wrap!
