2 egg whites
1/2 tsp white vinegar
1/2 cp granulated sugar
1/8 to 1/4 tsp ground cinnamon
1 pastry shell, baked, 9 inch

Filling:
2 egg yolks
1/4 cp water
1 cp (6 oz) semisweet chocolate chips
1 cp heavy whipping cream
1/4 cp sugar
1/4 tsp ground cinnamon

Directions:
Directions:
1) In a large bowl, beat egg whites and vinegar on med speed until soft peaks form.
2) Combine cinnamon and sugar; gradually beat into egg whites, 1 tbsp at a time, on high until stiff peaks form.
3) Spread into pastry shell.
4) Bake at 325f for 20 - 25 mins or until meringue is lightly browned. Cool.
5) For filling, whisk egg yolks and water in saucepan.
6) Add chocolate chips; cook and stir over low heat until a thermometer reads 160f and coats the back of a metal spoon.( do not boil). Cool.
7) Spread 3 tbsps over meringue; set remainder aside.
8) In a large bowl, beat the cream, sugar and cinnamon until stiff peaks form.
9) Spread half over the chocolate layer.
10) Fold reserved chocolate mixture into remaining whipped cream; spread over top.
11) Chill for 6 hours or over night.
12) Refrigerate leftovers.
