3 lbs. medium red, new potatoes
2 c. whipping cream
1 (5 oz.) pkg. Boursin Cheese with garlic & herbs
salt and pepper to taste
chopped parsley

Directions:
Directions:
Scrub potatoes; don't peel. Thinly slice potatoes; heat cream in saucepan with cheese. Melt cheese in cream. DO NOT BOIL cream mixture. Stir often. After cheese is thoroughly melted, place 1/2 of potatoes in greased 3 qt. baking dish. Pour 1/2 of cheese mixture over potatoes. Layer remaining potatoes on top; salt and pepper to taste. Pour remaining cheese sauce over top. Bake 1 to 1-1/2 hours at 350º. Top with parsley.
