2 C. quick or old-fashioned oats
1 1/2 C. flour
1 tsp. baking soda
1 tsp. salt
4 T. butter
2 T. cream cheese, softened
1 1/4 C. firmly packed light brown sugar
1 large egg
1/3 C. vanilla yogurt
1 tsp. vanilla
1 C. raisins (optional)
1/2 C. shredded carrot (about 1 large carrot)

Directions:

Combine oats, flour, soda and salt; set aside. Beat butter, cream cheese and sugar until creamy. Beat in egg, yogurt and vanilla. Gradually beat in oat mixture til blended. Stir in raisins and carrot. Turn dough onto waxed paper and form four 7-inch long logs wrapped in paper. Freeze until firm. Slice as needed and place on baking sheet.

Bake 375º for 8 minutes or til golden. Cool 2 minutes on wire rack.
