2/3 c. sugar
1/3 c. flour
1 tsp. salt
2 c. milk, preferably whole milk
3 eggs, separated
1 Tbsp. butter
1 tsp. vanilla
2 bananas
1 baked pie crust

MERINGUE
3 egg whites
6 Tbsp. sugar

Directions:
Directions:
Mix sugar, flour and salt together and stir with fork until silky smooth. Set aside. Warm milk but do not boil. Add sugar mixture, stirring constantly, bringing mixture to a boil. Lower heat and add egg yolks and continue stirring. When thickened, remove from stovetop and add butter, vanilla and bananas. Pour into baked pie shell.

Note: If pudding mixture doesn’t thicken while cooking, place pudding pan in cold water and let sit for 15 minutes. Pour pudding mixture into baked shell.

Meringue: Beat egg whites on high for 5 minutes or until stiff, adding sugar a tablespoon at a time as it is thickening. Spread over pie. Bake at 350º for 15-20 minutes, or until meringue is golden brown.

When separating eggs, be certain no part of the yolk is in the white because if it is, the meringue will not stiffen. If you do have a trace of yolk, remove with a spoon.
