Grapefruit Meringue Pie Recipe

1 1/3 cps granulated sugar
1/3 cp cornstarch
2 cps fresh pink grapefruit juice
3/4 cp water
3 egg yolks, lightly beaten
2 tbsps butter
1/2 tsp lemon extract
1 pastry shell, 9 inches, baked

Meringue:
3 egg whites
1/4 tsp cream of tartar
6 tbsps sugar

Directions:
Directions:
1) In a large saucepan, combine the sugar and cornstarch.
2) Stir in grapefruit juice and water until smooth.
3) Cook and stir over med high heat until thickened and bubbly.
4) Reduce heat; cook and stir 2 mins longer.
5) Remove from heat.
6) Stir 1/2 cp hot filling into egg yolks; return all to pan, stirring constantly.
7) Bring to a gently boil and cook and stir 2 mins longer.
8) Remove from heat.
9) Gently stir in butter and extract.
10) Pour hot filling into pastry shell.
11) In large bowl, beat egg whites and cream of tartar on med speed until soft peaks form.
12) Gradually beat in sugar, 1 tbsp at a time, on high until stiff glossy peaks form and sugar is dissolved.
13) Spread evenly over hot filling, sealing to edge of crust.
14) Bake at 350f for 12 - 15 mins or until the meringue is golden brown.
15) Cool on wire rack for 1 hr.
16) Refrigerate for atleast 3 hrs before serving.
17) Store leftovers in frig.
