3/4 cp granulated sugar
1/2 cp flour
1/4 tsp salt
1 1/4 cps water
2 egg yolks, lightly beaten
1/2 cp orange juice
2 tbsps lemon juice
2 to 3 tbsps grated orange peel
1/2 tsp grated lemon peel
1 pastry shell, baked, 9 inch

Frosting:
1/2 cp granulated sugar
2 egg whites
2 tbsps water
1/8 tsp cream of tartar
1/8 tsp salt
1/2 cp flaked coconut, flaked, opt

Directions:
Directions:
1) In a large saucepan, combine sugar, flour and salt.
2) Stir in water until smooth.
3) Cook and stir over med high heat until thickened and bubbly.
4) Reduce heat; cook and stir 2 mins longer.
5) Remove from heat.
6) Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly.
7) Bring to a gently boil; cook and stir for 2 mins longer.
8) Remove from the heat.
9) Gently stir in the juices and orange and lemon peel.
10) Cool to room temp without stirring.
11) Pour into pastry shell. Cool on wire rack for 1 hour. Chill for 3 hours.
12) In a large heavy saucepan, combine sugar, egg whites and water and cream of tartar and salt over low heat.
13) With a hand mixer, beat on low speed for 1 min.
14) Continue beating on low over low heat until frosting reaches 160f, about 8 to 10 mins.
15) Pour into a bowl of a heavy duty stand mixer.
16) Beat on high until frosting forms stiff peaks, about 7 mins.
17) Spread over chilled pie.
18) Sprinkle with coconut and serve.
19) Store in refrigerator.
