Ingredients: 1 pkg. broccoli spears(3 cups cooked broccoli) 1 Medium Onion Chopped 1 Carrot Shredded 1/4 Cup Butter(unsalted) 2 Cups Milk 1 Can Cream of Chicken Soup 1/2 teaspoon White Pepper 1 lb. Velveeta Cheese

Directions:Combine Cream of Chicken Soup, 2 cups of Milk and 1/2 teaspoon of White Pepper in a large pan. Heat the soup and milk on medium low, when hot and the Velveeta Cheese. While the soup is heating chop the onion and shred the carrot. Heat the butter in a skillet and saute the onion and carrot until translucent. Cook the broccoli following the package instruction. Drain the broccoli before adding to the Soup mixture. Heat for an additional 10 to 15 minutes before you serve.
This recipe is special because my grandson loves Broccoli Cheese Soup, so at life group I asked if anyone had a good recipe. Piper Autery gave me one that she had received from her neighbor Paula. The recipe was on a sticky 2 x 2 note sheet. This is how it was written: 3 c broccoli-cooked Saute: 1med onion 1carrot shredded 1/4 c margarine 2 cups milk Hot: Cream Chicken Soup White Pepper Melt after heating Velveeta cheese 1lb.
I am not a great cook and do not fly by the seat of my pants when I do cook. I like detailed recipes, so that I don't make a mistake. As you can see this is not very detailed, but I tried it out on the ladies that went to the Sock exchange and they and I thought it was good. I have written the recipe over so that it makes more sense. The white pepper is the trick. It is very strong, so taste before you add more than the recipe calls for. I started out with a 1/4 teaspoon the first time I made it and then added another 1/4 after I tasted it. I found the white pepper at Tom Thumb. Walmart did not carry it. |
