Ingredients:  
3 whole chicken breasts (or six boneless chicken breast cutlets)
5 oz can diced water chestnuts
4 oz jar sliced pimientos
1 ½ cups mayonnaise
1 tsp lemon juice
½ cup sliced almonds
1 ¼ cups French’s Original French Fried Onions(ones in the can)
2 cups shredded white cheddar cheese
Salt & pepper to taste

Directions:
Directions:
Boil chicken breasts. Cool and bone and cut into bite size pieces. Mix chicken with water chestnuts, pimiento, almonds, lemon juice and mayonnaise. Add salt and pepper to your taste. Add more mayo is it does not seem wet enough.

Pour into 9x13 pan. Top with cheddar cheese. Sprinkle with onion rings.

Bake for approximately 25 minutes or until cheese is lightly browned.

Serves six.
