8 tbsp (1 stick) butter
4 large eggs
1/4 tsp salt
2/3 cup sugar
1/2 tsp vanilla extract
1/2 tsp orange juice
1 cup flour
1 tsp grated orange zest
powdered sugar

Directions:
Directions:
Preheat oven to 350º. Butter and flour madeleine molds thoroughly. Melt butter and let cool. Beat together eggs, salt and sugar until very fluffy. Beat in vanilla and orange juice. Fold in flour, then the melted butter and orange zest. Pour batter into molds almost to the top. Bake for 10 minutes or until cakes are firm in the center. Let cool for one minute in molds. then turn out onto racks. Dust tops with powdered sugar before serving. Makes 36 servings.
