1 cup water
1/2 cup butter
1 tsp sugar
1/4 tsp salt
1 cup plus 2 tbsp sifted flour
4 eggs
1/8 tsp anise
oil

Directions:
Directions:
In a small saucepan, combine water, butter, sugar and salt. Bring mixture to a rapid boil. Remove pan from heat and add the flour all at once, stir vigorously. Cook the mixture over low heat, beating briskly until the ingredients thoroughly combine and the dough cleanly leaves the sides of the pan and forms a ball. Remove the pan from the heat, add the eggs, one at a time, beating well after each addition and beat the paste until it is smooth and glossy. If an electric mixer is used, set it at medium speed. Stir in the vanilla and anise. Drop the dough by teaspoon into the hot oil (365º) and fry until light brown. Roll in sugar.
