2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
3 large eggs
2 c. sugar
3/4 c. vegetable oil
3/4 c. buttermilk
2 tsp. vanilla
2 c. grated carrots
1 8-oz. can crushed pineapple, drained
1 can flaked coconut
1 cup chopped pecans



Frosting:

1 8-oz. package cream cheese, softened
1 3-oz. package cream cheese, softened
3/4 c. butter, softened
1 16-oz. package powdered sugar, sifted
1 1/2 tsp. vanilla

Directions:
Directions:
Grease and flour three 9-inch round cake pans. Set aside. Stir together flour, baking soda, salt and cinnamon. Beat eggs and sugar, vegetable oil, buttermilk and vanilla at medium speed until smooth. Add flour mixture, beating at low speed until blended. Fold in carrots, pineapple, coconut and pecan. Pour batter evenly into prepared pans.

Bake at 350 degrees for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean. Cool layers on wire cooling racks.

To make frosting: Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar, beating at low speed until light and fluffy. Stir in vanilla.

Spread frosting between layers and on top and sides of cake. Sprinkle with chopped pecans. Chill several hours before slicing. Enjoy!
