3/4 cp granulated sugar
3 tbsps flour
1/8 tsp salt
3 cps milk
3 eggs, beaten
1 1/2 cps flake coconut, toasted, divided
1 tbsp butter
1 1/2 tsps vanilla extract
1 pastry shell, 9 inch, baked

Directions:
Directions:
1) In a med saucepan, combine sugar, flour and salt.
2) Stir in milk; cook and stir over med- high heat until thickened and bubbly.
3) Reduce heat; cook and stir 2 mins longer.
4) Remove from heat; gradually stir about 1 cp of hot mixture into beaten eggs.
5) Return all to saucepan, cook and stir over med heat until nearly boiling.
6) Reduce heat; cook and stir about 2 mins more, do not boil.
7) Remove from heat; stir in 1 cp coconut, butter and vanilla.
8) Pour into pie shell; sprinkle with remaining coconut.
9) Chill for several hours before serving.
10) Refrigerate leftovers.
