Ingredients:

1 cp granulated sugar
1/4 cp cornstarch
3 tbsps flour
1/4 tsp salt
2 cps water
3 egg yolks, beaten
1 tbsp butter
1/4 cp lemon juice
1 tsp grated lemon peel
1 pastry shell, 9 inch, baked

Meringue:
3 egg whites
1/4 tsp salt
1/2 cp granulated sugar

Directions:
Directions:
1) In a med saucepan, combine sugar, cornstarch, flour and salt.
2) Gradually stir in water.
3) Cook and stir over med heat until thickened and bubbly.
4) Reduce heat; cook and stir 2 mins more.
5) Remove from heat.
6) Gradually add in 1 cp of egg yolks; return all to saucepan.
7) Bring to boil.
8) Cook and stir for 2 mins.
9) Remove from the heat.
10) Stir in butter, lemon juice, and peel until smooth.
11) Pour into pastry.
12) In a bowl, beat egg whites and salt until stiff but not dry peaks form.
13) Gradually beat in sugar until soft peaks form.
14) Spread over pie, sealing edges to pastry.
15) Bake at 350f for 12 - 15 mins or until meringue is golden.
16) Cool and store leftovers in frig.
