1/2 cp granulated sugar
1 tbsp cornstarch
1/2 cp water
2 cps fresh or frozen blueberries

Dough:
2 cps flour
1/4 tsp baking soda
1/4 tsp salt
1/2 cp canola oil
1/3 cp buttermilk
oil for frying

Directions:
Directions:
1) In a saucepan, combine, sugar, cornstarch, and water; add berries.
2) Cook and stir over med heat until the mixture comes to a boil.
3) Cook and stir for 2 mins; set aside to cool.
4) Combine flour, baking soda and salt.
5) Combine oil and buttermilk; stir in dry ingredients until mixture forms and ball.
6) Roll on a floured surface to 1/8th inch thickness; cut into 4 1/2 inch circles.
7) Place blueberry filling on each circle.
8) Fold over; seal edges with fork.
9) In a skillet over med heat; fry pies to 1/4 to 1/2 inch hot oil until golden brown, about 1 1/2 mins on each side.
10) Drain on paper towels.
