1/2 c. chopped onion
2 cloves garlic, minced
2 tbsp butter
3 tbsp. all purpose flour
1/2 tsp. salt
1/4 tsp. black pepper
1 1/2 c. reduced fat milk
2 tsp. fresh thyme or 1/2 tsp. dried
1 1/2 lbs. potatoes (4-5 med.)
5 oz. low-fat low sodium Ham cut into thin strips

Preheat oven to 350 degrees.

1. Sauce: in med. saucepan cook onion & garlic in hot butter over med. heat until tender. Stir in flour, salt & pepper. Add milk all at once. Cook & stir over med. heat until thickened & bubbly. Stir in thyme.

2. Scrub & thinly slice potatoes. Arrange 2/3 of the potato slices in a 2 qt. casserole, cover with 2/3 of the sauce. Top with ham. Top with remaining potatoes & remaining sauce.

3. Bake covered in a 350º oven for 55 min. Uncover & bake for 10 - 15 min. longer or until the potatoes are tender. Let potatoes stand 10 min. before serving.
