1/2 lb. Italian sausage
1 lb. ground beef
2 medium onions, chopped
5 cloves garlic, minced
2 (15 oz) cans tomato sauce
1 (14 1/2 oz) can plum tomatoes, undrained and chopped
1 (12 oz) can tomato paste
1 1/2 tsp dried oregano
1 1/4 tsp dried basil
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/4 tsp dried marjoram
1/8 tsp ground red pepper
1 (15oz) carton ricotta cheese
1 (8 oz) package cream cheese, softened
1/2 (8 oz) tub cream cheese with chives, softened
1/2 cup grated Parmesan cheese
4 cloves garlic, crushed
1/2 tsp pepper
1/2 tsp dried thyme
1/2 tsp dried oregano
4 cups shredded mozzarella cheese, divided
1 (8 oz) package dried manicotti shells, cooked

Directions:
Directions:
1. Remove sausage from casings. Cook sausage, beef, onion and garlic in a large Dutch oven until beef is browned, stirring until meats crumble; drain well. Return meats to Dutch Oven.
2. Add tomato sauce and next 11 ingredients; bring to a boil. cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally.
3. Combine ricotta cheese and next 7 ingredients in a large bowl; stir in 3 cups mozzarella. Stuff mixture evenly into manicotti shells.
4. Spoon half of meat sauce into a lightly greased lasagna pan or two lightly greased 2 1/2 quart shallow casseroles. Arrange stuffed shells over sauce. Spoon remaining sauce over shells.
5. Cover and bake at 350 degrees for 35 minutes or until thoroughly heated. Sprinkle with remaining 1 cup mozzarella cheese. Let stand 5 minutes before serving.
Yield: 7 servings.
