Crust:

2 c. sifted flour
1 tsp. salt
1 tsp. baking powder
1/4 tsp. soda
1/2 c. Crisco
1/2 c. buttermilk


Fresh Peach Filling:

6 c. sliced peaches
1 1/2 c. sugar
1/2 lemon -- juice only, or 2 T. real lemon
2 T. cornstarch
2 or 3 Tbs. butter
Sprinkling of cinnamon

Directions:
Pare, slice and measure peaches. Place peaches in bowl, pour lemon juice over them, add sugar adn cornstarch. Let set for an hour or more. They will form their own juice. Do not add water.

Sift flour, salt, baking powder and soda into mixing bowl. Cut shortening in with fork or pastry blender until it is like coarse crumbs. Add milk and stir all together until dough is damp throughout. Divide dough into two parts. Roll out 1/2 to size of baking dish to be used. Line bottom of baking dish (1 1/2 qt. size) with pastry. Sprinkle with sugar and put into oven at 400 for 10-12 minutes.

Pour peaches and any juice into prebaked crust. Dot with buttter. Roll out other 1/2 of dough and cut into thin strips. Cross strips over the top and sprinkle with a little sugar and cinnamon. Bake in preheated oven at 400ยบ for 25 minutes.

Note: Do peaches first. While they sit covered for an hour or more, make crust. Roll crust thin.
