1 c. diced onion
2 cloves minced garlic
1 T. butter or olive oil
1 can of black beans, rinsed and drained
1 c. uncooked converted rice
1 c. corn kernels (preferably cut off the cob or thawed, frozen corn)
2 ˝ c. water *
1 t. dried cilantro
˝ t. cumin
˝ t. Caribbean jerk seasoning
1 t. salt

Directions:
Directions:
In a sauce pan over medium heat, sauté onion in oil; when they begin to turn clean, add garlic and sauté for about 1 minute longer.

Add remaining ingredients except for beans and corn, put a lid on the pot, and bring to a boil. Reduce heat and simmer for about 15 minutes, or until rice is cooked.

Remove pot from heat and gently stir in the corn and beans. Allow to sit for a few minutes to let the heat from the rice warm the corn and beans.
