Olive oil
1 package. of Oriental flavored Ramen noodles with seasoning packet
2 C. boiling water
1 small zucchini, sliced ¼” slices
1 baby eggplant (the size of a light bulb), sliced ½” thick, each slice quartered
3 cloves of garlic, minced
½ onion, diced
½ bell pepper (any color), diced
2 T. sherry wine
1 T. soy sauce
¼ t. crushed red pepper flake
Sesame seeds
Kosher salt
Black pepper

Directions:

Heat medium skillet over medium heat. Break up noodles and place in a heat proof bowl with seasoning packet. Pour boiling water over the top, and cover with a tight lid or plastic wrap and set aside.

Begin to sauté the onion and bell pepper in olive oil while chopping other ingredients in the mean time. Add zucchini and eggplant to the pan with a heavy pinch of salt and red pepper flake. Add garlic and sauté until the onions are clear and the rest of the vegetables are very soft. Turn up the heat slightly, and add sherry and soy sauce. Reduce for about one minute, and remove from heat. Season to taste with salt, pepper and sesame seeds. Be careful with the salt because of the Ramen. Scoop noodles out with a slotted spoon and add to the vegetables. Serve immediately.
