24 oz cream cheese
3 large eggs
3/4 cup sugar
16 oz sour cream (Knudsen only)
2 tbsp sugar
fruit topping (Comstock brand is best)

Crust:
11 graham crackers (1 pkg)
1 cube melted butter or margarine

Directions:
Directions:
Preheat oven to 350º. Finely crush graham crackers and melt butter. Blend together and place in a 9x13-inch round springform pan (pan must be sprayed with Pam). Flatten cracker mixture to make crust. Soften cream cheese (room temperature or microwave). Mix until creamy. Add eggs and sugar until creamed together (no lumps). Pour over crust. Bake for 45 minutes at exactly 350º (if you bake for 55 minutes, it will make the cake more cake-like than custardy). While this is baking, take the sour cream and blend in the two tablespoons of sugar. Let set until cake comes out and slowly pour over cake. Let cool and refrigerate for 24 hours before serving. Serve with a fruit topping. Makes 12 to 16 servings.
