Penuche "Peanut butter Fudge" by my Aunt Ora Recipe

Ingredients: 2 c. brown sugar 3/4 c. whole milk 2 heaping tbsp. peanut butter 1 tsp. vanilla

Directions:I usually make a triple batch, so just triple your ingredients.
If doing a triple batch, grease a lasagna dish or 2 8x8 baking dishes with butter. If single batch 1 8x8 dish will do.
Combine sugar and milk. Heat over medium heat stirring constantly until your candy thermometer says "soft ball".
Remove from heat add vanilla and peanut butter. Whip with large wooden spoon till mixture becomes thick. You don't want mixture to be so thick as you won't be able to spread into dishes. (Thickness test: scoop out mixture if is just falls back into pan, it is ready).
YOU MUST MOVE FAST once mixture is wiped it will set up quick, pour into dishes. It is best to have a second pair of hands. One scooping mixture into dishes the other smoothing out in pan with a greased spatula.
Cool for 15 minutes then cut into squares with a sharp knife. |

Notes: This is a long time family recipe. My Grandmother would make it at Christmas time and give it to the men in the family. Then my mother took over making the Penuche, and now it is my turn. However, I make enough for everyone to have their own little box of Penuche in the family. Otherwise there would be a fight over it!!!!
