1 pork butt --can trim if too much fat
1 large pkg. or large can sauerkraut
4 c water
Coarsely ground fresh cracker pepper --to taste
salt to taste

Directions:
Directions:
1. Rinse pork and pat dry.
2. Season pork on all sides with salt & fresh
ground pepper and place in large pot.
3. Add water -- then sauerkraut
4. Bring to a boil then turn down to a simmer.
5. Cook (simmer) until meat is tender and has
fallen apart -- about 3 hours.
6. Keep an eye on the juice level--if it cooks out
add more water -- about a cup or two.
Before serving pick out any pieces of fat.

This can also be made in the crockpot or in the
oven.

Serve with mashed potatoes or warm crusty bread.
