2.5 lb boneless beef chuck roast, cut into cubes
2 Tbs oil
1 med. onion, chopped
4 garlic cloves, minced
2 14oz cans diced tomatoes
1 10 oz can beef broth
15 oz enchilada sauce, red or green
2 15 oz cans red kidney beans
1/2 C cold water
1/4 masa harina ( cornmeal)
cilantro

Directions:
Directions:
sautee beef with onion untilmeat is cooked. Add remainding ingredients except for the water and masa harina. Give it a good stir, then mix water and masa harina and add to stew. Cook for about 25 minutes until meat is tender. Serve with chopped onions, cilantro and sour cream. Tastes great with a good helping of Crackling Cowboy corn bread.
