Mexican Rice Recipe

About 1 T. Canola or Vegetable oil
About 2 cloves garlic
About 1/4 c. onions
1 c. rice
2 hot c. chicken broth OR 2 hot c. water with about
2-1/2 tsp. of chicken bouillon
About 2-3 T. tomato sauce (for color)
1 tsp. cumin (optional)

Directions:
1) Add oil to saucepan over medium heat. Once oil is hot, saute garlic and onion until garlic is slightly browned. Then add rice to saucepan. Continue to mix rice with garlic and onion until rice browns a little.
2) You can either buy your broth or make it yourself with water and chicken bouillon. Whatever you choose to use, make sure the liquid is boiling before you add it to the rice mixture. Once liquid is added to the rice, add a few T. of tomato sauce for color and a few leaves of cilantro and cumin if desired. Let rice boil for about 1 minute then cover saucepan with lid and place it over low setting. Cook for 15-20 minutes. When done, remove from heat and let sit covered for 10 minutes to allow rice to rise.

*Prepare rice according to the altitude of where you live. If you find that your rice lacks moisture where you live, add more water.
