¼ C. pineapple juice
2 T freshly squeezed lemon juice
4 (6 oz salmon filets)*

2 T. brown sugar
4 t. chili powder
2 t. lemon rind zest
¾ t. ground cumin
½ t.salt
¼ t. ground cinnamon
lemon wedges

Directions:
Directions:
Combine first 3 ingredients in plastic bag, seal and marinate for 1 hour turning occasionally.

Preheat oven to 400. If grilling - do the same.

Remove fish from bag, discard marinade.
Combine next 6 ingredients, sugar through cinnamon, place in shallow bowl and rub all over fish.
Place fish in an 11 x 9 inch baking dish coated with Pam.
Bake at 400 about 12 minutes, until fish flakes.
Serve with lemon wedges

*the amount of salmon can be more or less than indicated
but use the same amount of ingredients as shown.
