4 sprays olive oil cooking spray
1 Tbsp. Dijon Mustard
2 medium potatoes peeled and cut into 8 wedges each
½ c. dried bread crumbs
¼ tsp. salt
¼ c. all purpose flour
¼ tsp. black pepper
20 oz. uncooked cod, four 5 oz. fillets
¼ c. fat free milk

Directions:

Coat baking sheet with cooking spray. Place potato wedges on baking sheet and light coat with cooking spray, season to taste. Bake until golden brown and tender, about 45 minutes. Whisk milk & mustard together in a shallow dish. Place bread crumbs in another dish and put flour in a third dish. Season both sides of fish. Place fish in flour and turn to coat, then dip in milk mixture and turn to coat and then place fish in bread crumbs to coat and lightly coat with cooking spray. Bake until fish flakes easily 10 to 15 minutes
