3 eggs, beaten
1 C sugar
1/2 C oil (not olive)
3 C flour
1 t. vanilla
pinch of salt
1 t. baking powder

Directions:
Directions:
Use mixer to combine eggs and sugar and oil. Add some flour, all of baking powder, and salt. Take out of mixer and mix in rest of flour if mixer is having trouble (hand mixers do). Chill dough well or even overnight. Roll out on well floured surface about 1/8" to 1/4". It is best to dip cut-outs in some flour before cutting out designs. Place cut-outs on cookie sheet. You can lightly spray with Pam if desired if cookie sheet tends to stick. Bake at 350 for 8-10 minutes. Do not brown. Remove and place on racks to cool. Use Nancy's Frosted Cookie recipe for the frosting. Put in airi tight container like Tupperwear, etc. I place wax paper between each layer.

I make about 2-3 recipes of these cookies each Christmas all at the same time. Keep dough well chilled or it will get sticky.
