Long green chile (2lbs)
Jalapeņos 2-8 (depending on how hot you want it)
Yellow chiles 4-8 (depending your taste buds)
Tomatoes (THINLY SLICED) (6-8 Roma or 4 Large ones (depending how much you like tomatoes)
Onions VERY THINLY SLICED (If you love them, use 3 to 5 medium or 2 large ones)
Garlic 4 to 6 cloves (diced very fine)
Butter 2-3 sticks
1 large Valveeta cheese
1 Carnation can milk
Everything is THINLY sliced only dice the garlic.

Roast all your chiles first. It is if you do this on the grill. After roasting, place the chiles in a wet and wrung hand towel or foil and wrap them up tight. Place in a plastic grocery bag so that they sweat while cooling off. Wait until they cool completely --this will make it easier for you to peel chiles. Cut in long pieces the length of the chile or sliced.

In large saucepan, melt the butter, but do not let it burn. Add and saute the garlic, tomatoes, and onions in the butter. Add all the chiles last. Let all this saute together. You may want to add a LITTLE water and some salt. Start stirring until everything is mixed and smelling good. You'll know when. Then add 1 large Valveeta Cheese (cut into cubes) - add a little at a time and keep stirring until all the Valveeta is melted (you're using medium heat to low because you don't want the cheese to burn). Last, add about 3/4 can of Carnation milk 1 (add more or less depending on the consistency you want).

Serve with tortilla chips or use on tacos.
