4 chicken breasts
fresh goat cheese
4 thin slices prosciutto
dried sage
2 cups flour
2 eggs beaten
2 cups bread crumbs
olive oil
salt and pepper

Directions:
Directions:
Season chicken with salt and pepper. Cut a horizontal incision into each breast, creating a pocket. Stuff each pocket with goat cheese, 1 slice of prosciutto and sage.

Arrange a plate with the flour, a bowl with the eggs, and a plate with the bread crumbs. Dredge each stuffed breast with flour, dip into egg mixture, and then dredge in the bread crumbs.

Heat olive oil in large saute pan. Over medium heat cook chicken until golden brown and becoming firm to the touch.
