1 cup plus 2 T. crushed graham crackers
¼ cup melted butter
¼ cup sugar
2-8 ounce packages of cream cheese
1 teaspoon vanilla
½ cup sugar
3 eggs
1 pint sour cream
1 teaspoon vanilla
¼ cup sugar

Set oven to 375º.

Grease 9" springform pan and sprinkle with the 2 tablespoons crumbs. Mix rest of crumbs with butter and ¼ cup sugar until crumbly. Pack into bottom of pan.

With mixer at low, beat cream cheese until smooth and fluffy. Gradually add 1 teaspoon of vanilla, ½ cup sugar and eggs. Beat until creamy. Pour into prepared pan. Bake for 20 minutes.

Remove from oven. Let stand 15 minutes.

Turn oven to 475º.

Stir sour cream with last 2 ingredients until sugar is dissolved. Spread carefully on cheesecake. Bake 10 minutes. Cool at room temperature. Refrigerate until chilled.

My mother perfected this cheesecake many years ago and even won a contest with it. It is my father's absolute favorite dessert ever. This is not a "New York" style cheesecake rather it is a layered more creamy style.
