6 ounces Italian bacon (pancetta, unsmoked) diced
3 large eggs
3 ounces Parmesan cheese
4 green onions, chopped
1 tablespoon olive oil
6 tablespoons white wine
2 tablespoons chopped parsley
½ teaspoon black pepper
1 lb. spaghetti

Directions:
Directions:
Prepare pasta according to package directions. Start sauce as you need the pasta to be very hot when you toss with the sauce.

Sauté bacon in olive oil in pan for 2 min over low heat. Add onions and sauté for a few more minutes. Add wine and cook until evaporated. In a large bowl, mix eggs, cheese, parsley and pepper. Beat well. Cook spaghetti and pour into bowl with egg mixture and toss quickly so you don’t end up with scrambled eggs. Add the hot pancetta sauce, mix well and serve at once with extra ground pepper and cheese.

This is a Merkel family classic. My parents favorite restaurant in San Francisco from back in the day was Vanessi's. I somehow stumbled on this recipe which claims to be authentic. I have adjusted it over the years but I believe this to be really very close. It is my go-to comfort food meal as I typically have all these ingredients on hand.
