¼ cup shortening
1 egg, well beaten
1 cup granulated sugar
3 medium
1 tsp. vanilla
3 medium apples, peeled, cored and grated
1 cup flour
1 tsp. baking soda
¼ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
¼ cup chopped walnuts or pecans (optional)


Vanilla Sauce:

½ cup butter
½ cup heavy cream
1 cup granulated sugar
2 tsp. vanilla

Directions:
Directions:
Heat oven to 350º. Grease an 8" square pan. Cream shortening; stir in egg, vanilla and sugar. Add grated apples to creamed mixture. In separate bowl, sift together flour, soda, salt, cinnamon and nutmeg. Add dry ingredients to apple mixture and stir well. Mix in nuts if desired. Pour batter into pan and bake in pre-heated oven 45 minutes. For the vanilla sauce, put all ingredients in a double boiler and cook over hot water for about 10 minutes, stirring occasionally. Sauce will be thin. Spoon over warm cake. Makes 2 cups. Sauce can be made ahead of time and stored in refrigerator. Reheat in double boiler or in microwave.
