24 Ritz© Crackers
1/4 c. flour
1 tsp. salt
2 large eggs
1-2 tbsp. water
2 oz. cold Jack cheese
12 medium okra
2-4 c. corn oil
salt to taste

Directions:
Directions:
Grind crackers in food processor. In a shallow bowl, combine crackers, flour and salt. In another bowl, beat egg with water.
Cut cheese into twelve oblong slices 1/4 inches thick. Cut a 2-inch slit lengthwise on side of each okra. Don't go all the way through. Gently pry open. Pull out seeds if you can and insert cheese slice.
Dip okra in egg to coat and then roll in cracker crumb mixture. Chill for 5 minutes. Heat oil in deep skillet until very hot, but not smoking. Fry okra, turning them until they are golden brown. Drain and salt to taste. Can be served with salsa of your choice.
