1 gallon of cleaned fish - cut into pieces
3 c sugar
White vinegar
1/4 c whole pickling spice
1 c white sweet wine
Sliced onions

Directions:
Directions:
Put fish into salt water strong enough to float an egg for 48 hours. Drain and cover with white vinegar for 24 hours. Drain well and take 4 cups fresh white vinegar and bring to a boil. Remove from heat and add 3 cups of white sugar; mix well and cool.

Add 1/4 cup whole pickling spice and 1 cup of white sweet wine. Pour this mixture over fish and all add the sliced onions you like. Let stand 12 days.
