4 c cooked beans (15 bean soup type beans)
3 c frozen sweet corn
2 c chopped celery
1 c chopped green pepper
1/2 c onion
4 diced jalapeņo peppers (remove seeds)

Marinade:
1 c apple cider vinegar
1/4 c canola or vegetable oil
1/4 c sugar
1 tsp salt
1/2 tsp pepper

Directions:

Clean, cook and rinse dried beans. Put all vegetables into a large bowl.

Boil marinade ingredients and let sit to cool. Pour over vegetable mixture. Mix together and refrigerate over night. Serve with scoopers or use as a side salad to liven the flavor or venison or pork.

This was originally Mom's recipe that I have revised to work better with my garden. The 15 bean soup beans can be purchased at the store. The original recipe calls for 1 can of pinto beans and 1 can of black eyed peas - drained and rinsed.
