3 pounds ground venison
2 pounds ground beef
2 tsp black pepper
3 tsp mustard seed
2 tsp fennel seed
2 tsp garlic gourmet seasoning*
2 tsp liquid smoke
3 Tbsp Morton's Tender Quick curing salt

Directions:
Directions:
Combine all ingredients. Form into 6 rolls and refrigerate overnight. Bake at 170º for 8 hours - turning every two hours. Do not wrap during baking. Sausage will form its own skin. Cool, wrap and freeze.
