2 c. cream of wheat
2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. ground or freshly grated ginger
1/2 c. vegetable oil
2 1/2 c. mashed ripe banana
1 1/2 c. water

In a mixing bowl, combine all ingredients in the order listed, mixing thoroughly as you add a new ingredient. Spray baking pan. Bake at 375º until firm and nicely brown.
