4c. rice
1c. tomato paste
2 boneless skinless chicken breast
1/3c. olive oil
1 onion diced
2 cloves garlic
1lb. frozen vegetables
1/2 tsp. black pepper
1/2 tsp. cayenne pepper (optional)
1/2 tsp. season salt

Directions:
Directions:
Cut chicken breast into bite size; season to taste. Heat olive oil in sauce pan; add chicken to oil. Once cooked, add onions, garlic, tomato paste and stir. After 5 mins, add vegetables and rice; stir. Put into a sizable baking pan and bake for 30-45mins on 375-400º
