1/2 part yellow corn meal
1/2 part instant mashed potato flakes
lemon-pepper seasoning to taste (I'll use about 1/4 cup per about 6 cups of the combined corn meal-potato flakes mixture)

Directions:
Put ingredients into a 2-inch deep Tupperware square or rectangular container with a lid. Close lid tightly and shake to blend ingredients.
Fish:
Heat 48 ounces or more of good cooking oil in an electric frying pan to 475º. New oil works best. I recommend using canola oil. Beat an egg with a few drops of milk in a shallow, flat pan. Dip fish into egg wash, then place into lemon-pepper mixture and coat both sides. I usually scoop some mix on top of the fillet and pat it down a little for better coating. Turn fillet over in the mixture and do the same on the other side. Place the fillet into the hot oil and fry about 2-3 minutes on each side depending on the size of the fillet and how done you like it. Drain on paper towels and enjoy with a frosty Grain Belt Premium beer!
