1 (9 in.) graham cracker crust
3 tsp. cornstarch
1 pkg. (4 oz) vanilla flavor instant pudding mix
1 can (15 oz) pineapple chunks, in juice
1 can mandarin orange slices
milk
2 Tbsp. lemon juice
1 c. sour cream
½ c. pineapple juice
4 Tbsp. sugar


Graham cracker crust:

1 ¼ c. graham cracker crumbs (pre-packaged or crushed from crackers)
¼ c. sugar
4 Tbsp. melted butter

Directions:
Directions:
Mix all ingredients for crust together in a small bowl; press in bottom and around all sides of 9 inch pie plate. Chill about 15 minutes before filling.
Prepare pudding mix, following label directions substituting 1 c. sour cream for 1 c. of the milk called for on package. Pour into prepared crust; let stand 15 minutes to set. Mix 4 Tbsp. of sugar and 3 tsp. of cornstarch in small saucepan. Drain fruits, reserving juice they were packed in separately. Measure ½ c. pineapple juice, adding juice from mandarin orange slices if necessary to make ½ cup, add to sugar and cornstarch mix along with lemon juice. Cook, stirring constantly, until glaze boils 1 minute; cool slightly. Arrange orange slices and pineapple chunks on top of creamy layer of pie; spoon glaze over fruits; chill. (you can substitute2 to 4 fruits of your choice- we just like the orange and pineapple taste-especially in the summer!)
