1 pkg. Ranch Style dressing mix
Up to 1 lb. bacon, cooked
8 oz. sour cream
½ c. green bell pepper, chopped
1 c. mayonnaise
½ c. green onions, chopped
1 pkg. Mexican cornbread mix
2 c. shredded cheddar cheese
2 cans (16 oz) pinto beans
1 can (17 oz) whole kernel corn, drained
3 large tomatoes

Directions:

Mix and bake Mexican cornbread according to package directions. Let cool, then
Crumble and set aside.
Cook and crumble bacon. Set aside 1 Tbsp. of crumbled bacon for garnish.
Combine salad dressing mix, sour cream and mayonnaise; set aside.
Slice about half of one tomato, set aside for garnish. Chop remaining tomatoes.
Chop bell pepper and green onions; combine pepper, onions and chopped tomatoes.
In a large straight sided glass bowl or trifle dish, assemble layers as follows:
Half the crumbled cornbread
Half the reserved crumbled bacon
One can of pinto beans, undrained
Half the tomato, pepper, onion mixture
Half a can of drained corn
Half of reserved dressing mix
One cup shredded cheese
Repeat layers.
Garnish with tomato wedges and 1 Tbsp. of bacon crumbles. Cover and chill at least 2 hours before serving.
