1 egg
1/3 c cornmeal
1 tsp chili powder
1 tsp salt
2 large catfish fillets (about 11/4 lbs) cut into serving pieces
2 Tbsp vegetable oil

Directions:
Directions:
In pie plate, beat together egg and1 tbsp water. On piece of waxed paper, combine cornmeal, chili powder and 1 tsp salt. Dip catfish into egg mixture and dredge in cornmeal mixture until well coated. In large skillet over med. high heat, cook catfish in hot oil 10 min. turning once, or until fish is opaque. Transfer to paper towels to drain completely
