1 can (12 oz) evaporated milk
2 1/2 cps graham cracker crumbs (about 32 squares)
1/4 cp butter, melted
1 pkg (3 oz) strawberry gelating
1/2 cp boiling water
1/4 cp lemon juice
1/4 cp granulated sugar
1 tsp grated lemon peel

Directions:

1) Pour milk into large bowl; place mixer beaters in the bowl.
2) Cover and refrigerate up to 2 hrs.
3) In a small bowl, combine cracker crumbs and butter; mix well.
4) Set aside 1/4 cp of topping.
5) Press remaining crust mix onto the bottom and 1 inch up the sides of a greased 9 inch springform pan. Set aside.
6) In a bowl, dissolve gelatin in boiling water; stir in lemon juice and sugar.
7) Cool to room temp.
8) Remove bowl from frig and beat milk until soft peaks form.
9) Gradually add gelatin mix; beating until stiff peaks form.
10) Fold in lemon peel.
11) Spoon into crust; sprinkle with reserved crumbs.
12) Chill for atleast 4 hrs or until set.
13) Carefully run a knife around edge of pan to loosen.
14) Remove sides of pan.
15) Refrigerate leftovers.
