10 slices bacon, chopped
1 3/4 cups flour
2 tbsp sugar
1 tbsp baking powder
1 tsp salt
1 1/2 cups shredded cheddar cheese
1 egg, beaten
1 cup milk
3 tbsp butter, melted
Directions:
Directions:
Cook bacon, until crisp. Drain well reserving 2 tbsp of drippings. In a large bowl combine the flour, sugar, baking powder, and salt; stir in cheese and bacon. In a small bowl combine egg, milk, butter, and reserved bacon drippings. Add to the dry ingredients; stir just until moistened. Divide batter among 10 greased muffin tins. Bake at 400ºF for 20-25 minutes.
