Virginia's Pulled Pork Recipe

DRY RUB
3 T. coarsely ground black pepper
3 T. dark brown sugar, packed
3 T. paprika
2 T. coarse salt
1 tsp. cayenne pepper

MOP
1 C. cider vinegar
½ C. water
2 T. Worcestershire sauce
1 T. coarsely ground black pepper
1 T. coarse salt
2 tsp. vegetable oil

CAROLINA BBQ SAUCE
1½ C. cider vinegar
½ C. ketchup
1 T. dark brown sugar, packed
1 tsp. salt
½ tsp. red pepper flakes

DRY RUB
Mix all ingredients in small bowl. Place pork on work surface, fat side up. Sprinkle rub all over; press into meat. Cover with plastic and refrigerate at least two hours or overnight.

MOP
Mix all ingredients in small bowl; cover and refrigerate. Best if made night before. Place spiced pork in crock pot and pour mop over all.
Cook on low for the first 6 hours; turn to high for the final 2.

Pork is ready when it can be easily shredded with a fork.

Mound on platter; pour some of the juice from the crock pot on top.
